One of the most dynamic independent restaurant scenes in the region. Nobody expected that. That's the story. 

Chattanooga's inclusion in the inaugural MICHELIN Guide South confirmed what was already happening for years. Three restaurants recognized. One Bib Gourmand. And one restaurant that nearly deleted the notification email because they thought it was spam (true story!). That detail is the scene in miniature: talented, unselfconscious, not chasing the spotlight. The scene is independent because it had to be. The chefs here built something using local product, Appalachian influence, and genuine relationships with the farms and producers around them.
